Paprika paste is a traditional Portuguese seasoning made by salting red bell peppers and grinding them into a paste called 'Massa.'

It is similar to soy sauce and miso in Japan and is used daily in Portuguese cuisine.

What Dishes Does it Go Best With?

It's an unfamiliar seasoning in Japan, making it hard to imagine the flavor.

It also makes it harder to come up with new recipes.

I have seen it sold in bottles.

Massa has high salt content, so it's unlikely that you'll use up a whole bottle in one go.

With that said, here's an example of a quick and easy Massa recipe!

Put the meat and seasonings in a ziplock

and marinate them overnight in the refrigerator.

It's quick and hassle-free, and the next day you can just grill it!

Use paprika paste for more flavor variations.

Sauteed Pork Loin with Paprika Paste and Sakekasu

Ingredients:

250g - Pork loin

50g - Sake Kasu

1 Tbsp. - Paprika paste

1 Tbsp. - Salad oil

1 pinch - Coarsely ground pepper

Cooking Instructions:

(1) Put the sakekasu and all the seasonings in a sealed plastic bag and gently mix everything together from the outside of the bag.

(2) Put the pork loin into the bag and rub until the meat is coated on both sides with the mixture from (1).

(3) Refrigerate overnight to marinate thoroughly. (The meat can be kept chilled in the refrigerator for 5 to 6 days.)

(4) Heat the salad oil in a frying pan and brown the meat. The juices from the meat and the sakekasu (sake lees) marinade will match beautifully with your favorite sliced vegetables such as bell peppers.

Aromatic Rosemary Chicken Wings

Ingredients:

200-300g - Chicken wings

30-40g - Grated onion

1 clove - Grated garlic

1 Tbsp. - Paprika paste

2 tsp. - Olive oil

1 pinch - Minced rosemary 

1 pinch - Coarsely ground pepper

A drizzle of honey

"Adjust garlic, rosemary, and coarsely ground pepper to taste."

(Cooking Instructions)

(1) Rinse chicken wings under cold water and drain thoroughly with paper towels.

(2) Place all ingredients in a sealed plastic bag and gently rub from the outside of the bag until all the seasonings are evenly distributed over the meat.

(3) Refrigerate overnight to marinate thoroughly. (The meat can be kept chilled in the refrigerator for 5 to 6 days.)

(4) Grill for about 15 minutes to brown.
